Background of Construction
Byeonsan Master Bajirak Juk was opened 27 years ago. Clam rice porridge gradually became a nationally popular dish after Kim Soon-nyeo served clam rice porridge to a customer at the Restaurant Oncheon Sanjang in Daehang-ri, Byeonsan-myeon, Buan-gun, Jeollabuk-do. As soon as the restaurant started serving the dish, its reputation spread by word of mouth, and it didn’t take long to become famous, with more than 500 customers coming to enjoy the dish every day.
Kim Soon-nyeo says that clam rice porridge was invented because her father loved to drink. In fact, her mother cooked clam soup and clam rice porridge for him whenever he drank a lot. Kim says that she invented her recipe by combining her mother’s recipe with her own ideas, effort and passion.
Development
Byeonsan Master Bajirak Juk, the original clam rice porridge restaurant, was designated as a local food restaurant by Jeollabuk-do and chosen as one of Korea’s top 100 restaurants. In 2019, the restaurant was certified as an excellent multipurpose business as it is equipped with a fire protection system and emergency exit safety facilities, and its fire prevention and safety management have been evaluated with a high score.
Composition
The restaurant opens from 8:30 am to 6:30 pm all year round. It has a total of 460 seats and a parking lot. Its main dishes include ginseng clam rice porridge, raw clam bibimbap, spicy raw clam salad, and buckwheat and clam pancakes.
Current Status
Byeonsan Master Bajirak Juk offers its customers a pick-up service from their house or accommodation and an interpretation service in Japanese. The restaurant has appeared frequently on various TV channels including MBC, SBS, and KBS. Kim Soon-nyeo, the inventor of Byeonsan-style clam rice porridge, is considered a “master” as she became a candidate for the New Knowledge Worker of Korea in 1998 at the recommendation of local residents. The restaurant was established in other locations for about eight years, but it finally came back to Byeonsan, the hometown of clam rice porridge, and about one year later a franchise was opened and run by the main restaurant in Jeonju, Jeollabuk-do. A restaurant was also opened in Jeonju due to local customers’ love calls and won people’s hearts for a short period of time.
